Bahama Shack brings the bold, soulful flavors of the Bahamas to the streets of Chicago. Starting at the University of Chicago, Bahama Shack is ready to meet you wherever you are. Inspired by island cooking traditions and designed for life on-the-go, Bahama Shack serves comfort-forward Caribbean dishes made fresh, fast, and full of flavor.
Under the direction of Chef Courtney Neil, Bahama Shack is guided by a deep respect for Bahamian food culture and the belief that great food should feel generous, welcoming, and satisfying. Drawing from generations of island cooking and her own culinary training, Chef Courtney translates classic Bahamian flavors into street-ready dishes that honor tradition while meeting the pace and energy of city life.

Chef Courtney neil
Born and raised in The Bahamas, Chef Courtney Neil is the chef and creative force behind Bahama Shack. Drawing from generations of Bahamian home cooking, she brings bold, deeply comforting island cuisine to a street-forward format designed for movement and community.
Chef Courtney’s culinary path blends tradition with training. She earned degrees in Culinary Arts and Culinary Nutrition, Food Science, and Product Development from Johnson & Wales University, and sharpened her skills in notable kitchens including Ballyhoo Hospitality’s Jackman & Co. and Coda di Volpe, and Disney’s California Grill and Hollywood Brown Derby.
Known for her guest-first, inclusive approach to hospitality, Chef Courtney leads with care, intention, and accessibility. Through Bahama Shack, she aims to introduce Chicago to the vibrancy and nourishment of authentic Bahamian food—creating meals that feel joyful, grounding, and meant to be shared.
